Although a hip roof is not gabled it may have dormers or connecting wings with gables.

The degree of such an angle is referred to as the hip bevel. A square hipped roof is shaped like a pyramid with a pointed tip at the center while a flat roofed style creates two triangle sides and two trapezoidal sides. A hip or hipped roof slopes down to the eaves on all four sides forming a horizontal ridge a roofer will usually put a vent along the top of this ridge. It was extensively used for the roofing of the american houses back in the 1950s.

When the building is square the hip roof is pointed at the top like a pyramid. The earliest known example of this roofing is the french quarter of the new orleans. A hip roof has sloping panels on all sides extending all the way to the eaves. There are several ways to make a hip roof but in general they come down to two basic shapes.
